Your Salad Days: 3 Summer Recipes for a Healthy, Youthful Glow!

It’s almost summer! And there’s nothing better for keeping that youthful glow than feeding your skin with nourishing vegetables and healthy foods. We've got 3 perfect salad recipes to help you eat your way to glowing, healthy skin. Here are our favorite flavorful summer salads... 

Balsamic Grilled Steak Salad with Peaches

Ingredients:

1 lb. skirt steak, 1/4 c. balsamic vinegar, 1 clove garlic, minced, 1 tbsp. brown sugar, 1 tbsp. vegetable oil, salt, black pepper, 1/4 c. extra-virgin olive oil, Juice of 1 large lemon, 6 c. baby arugula, 2 peaches (thinly sliced), 1/3 c. crumbled blue cheese or feta. 

Steak Prep:

Begin by marinating the steak: simply add the steak, balsamic, garlic and brown sugar to a large Ziploc bag and leave for 20 minutes. Next, heat a grill or grill pan to high, rub steak with vegetable oil and season with salt and pepper. Grill until desired color, approx 3 minutes per side for medium rare. Let rest 5 minutes, then slice. 

Salad Prep:

Whilst the steak is cooling, whisk together olive oil, lemon juice and a pinch of salt and pepper in a small bowl. In a large serving bowl, add the arugula, sliced peaches, blue cheese or feta, and steak. Top with your dressing and toss. 

Piña Colada Chicken Salad

Does anything say summer more than a Piña Colada? There’s a bunch of ingredients to this but the prep is fairly simple, and the taste is superb - well worth the grocery list!

Ingredients:

1 lb. boneless skinless chicken breasts/thighs (cut into tenders),  1 c. flour, 2 large eggs (beaten), 1 c. shredded coconut, salt, black pepper, 1 head romaine, 1 red bell pepper, thinly sliced, 2 c. pineapple, chopped, 1/2 c. coconut milk, Juice of 2 limes, Zest of 1 lime, pinch of crushed red pepper flakes.

Chicken Prep:

Start by preheating the oven to 400°. Take two bowls; place the flour and coconut into one, and whisk the eggs in another. Dredge the chicken in the egg mixture before covering with the flour and coconut. Transfer to a baking sheet. Season generously with salt and pepper and bake until cooked through and coconut is golden, approx. 12 minutes. 

Salad Prep:

Whilst the chicken is cooking, combine the romaine, red pepper and pineapple in a large bowl. In a separate bowl, make your dressing by whisking together the coconut milk, lime juice and zest, and red pepper flakes and season with salt. Add the chicken and voila - the perfect summer salad.

Strawberry Balsamic Pasta Salad

Yes - strawberry and balsamic - if you haven’t come across this combo before, I assure you - you won’t be looking back! This recipe is super easy too - just a simple one-bowl mix!

Ingredients:

1 lb. farfalle, 1/4 c balsamic glaze (or 1/4 c. balsamic vinegar - bring to boil, then turn down the heat & simmer and reduce till thickened - approx. 10 mins), 1/2 c. Feta, crumbled, 2 c. strawberries, quartered, 1/2 c. baby spinach, pinch of salt and black pepper, 1/4 c. toasted almonds for garnish. 

Prep:

Cook the pasta according to packet instructions. Add to a large serving bowl the feta, strawberries and spinach, season generously with salt and pepper and toss to combine. Finish with balsamic glaze and a sprinkling of toasted almonds - yum.
